Sourcing artisanal, naturally-aged cheese can be quite a chore, especially on short notice. Mumbai-based The Spotted Cow Fromagerie sells their line of small-batch, preservative-free cheeses pan-India. You’ll spot Italian, French and Swiss cheeses and semi-hard variants such as Tomme de Bombai.

One of the best things on their menu is the semi-soft Bocconcini Di Bufala which translates to ‘small bites’ in Italian. Bocconcini are smaller balls of mozzarella and each pack features eight pieces of cheese, which is ideal if you’re planning a party menu since they have a shelf life of about 15 days. Bocconcini works best in antipasti platters, but it can also be crumb-fried and served as appetisers.
