Sunday Classics: Fish Orly from Bijoli Grill
Calcutta’s own version of European fried fish

Did someone say crunchy batter-fried fish? Count us all in!
The ‘orly’ is a French cooking term that describes batter-fried fish. Soft flaky Bhetki fish is marinated and seasoned after which it is dipped in a flour batter and deep fried slowly till it turns golden brown and puffs up to form the crunchy exterior.
One bite into the piping hot fry, and the flaky fish emerges from behind a puff of steam. The batter is crisp and complements the softness of the fish. This deep fried delight is best paired with tartar sauce which adds that hint of tang.
The fish orly is a well loved classic that never fails to satisfy those seafood cravings. Order a side of French fries to make it a full meal because what is fish without the chips?
