While the Thai green curry gets almost all the attention most of the time, this Valentine’s week is the perfect time to focus on all things in the colour of love – red.
The Thai red curry is created using red, yellow and green peppers, with the curry paste highlighting the citrusy notes of lemongrass and lime leaves that pair so well with the spicy flavours of the dish. It is also packed with veggies like pakchoy, Chinese cabbage and zucchini, which add a crunch to the curry. The creamy coconut milk balances out the strong flavours of the curry paste while the Thai basil leaves create a herby aftertaste.
Pairing the curry with steamed white rice, brings out all its flavours, while the garnish of chillies add to the heat.
