21-year-old Dibyadarsana Ghosh, a trained chef from D. Y. Patil University, Mumbai, knows that comfort really lies in the customisation. Soo Food by Dibya allows you to pick the kind of broth you want—Thai, spicy or non-spicy. You can even have the protein of your choice, be it pork Tonkatsu or chicken Katsu. The ramen is served with a Shoyu egg (eggs in soy sauce) and veggies like spring onion, spinach, bok choy and nori sheets. Ghosh sources all her ingredients fresh from local markets and buys spices and sauces from old Chinatown in the city.
Try the Spicy Ramen Broth with Tonkatsu, where the spicy broth is complemented both by the crunch of crumb-coated pork fillet as well as a dash of fresh veggies.
