Pork with black sesame seeds from Nohoru

Winter is coming and it’s the perfect time to explore the welcoming taste of Kalo Til Diya Gahori. An heirloom recipe passed down from an Assamese mother to her daughter, this beautiful, one-of-a-kind black sesame pork is available at the Kolkata cloud kitchen Nohoru. “I suggest teaming it with Gobindobhog rice or bhaat bhaja and eggs'' says Baishali Chakravarti, the owner of Nohoru. The chef also shares that the key to cooking pork in black sesame seeds is roasting it right and achieving that perfect tenderness.
If you’re going for a wholesome platter, don’t forget to add some Pork Kosha and some Gahori Bhaja (fried pork), which is made with frying the pork in its own fat, and adding a dash of garlic and chillies. Psst… Nohoru is also set to launch Pork Samosas soon.
