Galawati Kebab at Aminia

At Aminia, kebabs are not mere openers, they’re the show-stoppers. The Awadhi diner that opened its doors in 1929 serves the most authentic galawati in the city. The story goes that the Nawab Wajid Ali Shah of Lucknow wanted his royal chefs to create a kebab so soft that it wouldn’t need any chewing. This gave way to the galawati - a kebab where the meat is kneaded by hand to achieve the silken texture, followed by a cherry-picked array of spices. Shaped into little dense patties, the kebab is shallow fried for a crunchy base while the meat steams and preserves the texture. 

Popularly served with paratha and an onion salad, this kebab is a must try this puja, with or without biriyani!
