Devilled Eggs at SodaBottleOpenerWala

A spicy twist on Kolkata’s ‘dimer' devil

Who doesn’t enjoy crunchy, deep-fried devilled eggs on nippy evenings?  SodaBottleOpenerWala has put a delicious spin on Kolkata’s  ‘dimer’ devil and we certainly can’t complain. The Irani cafe and bar opened its doors in the city last year and is famed for its traditional Parsi fare and classic ‘Bombay’ street food. 

Their devilled eggs feature hard boiled eggs nestled within a spicy and umami-rich chicken keema medley. The eggs are crumb-coated and fried till golden-brown. It’s the crunch makes all the difference and also adds a much-needed textural intricacy to the soft keema and egg filling. It is served cut in half which makes it perfect for sharing.  Pair this with the gin-based Rustom Narangi or with a cup of the classic Irani tea!
