Much like Goan curries, the Chicken Xacuti from Tribe Cafe is high on the spice scale with cloves, cinnamon, pepper, cumin, coriander and fennel. The dish also uses sesame seeds and fenugreek that add a subtle bitterness, balancing out the heady spices. The xacuti masala comprises a mix of onion, garlic and ginger in which the chicken is cooked. The bright red colour comes because of Kashmiri red chillies. The flavours are balanced out with the tang of the tamaring and while it is traditionally served with bread, Tribe Cafe serves it with pilaf, which makes it so much better.
