A Bengali favourite befriends an Italian staple at Bianco

A Bengali's love for chingri malaikari is well known, but pair that with some creamy risotto and you have on your plate a culinary masterpiece. And that is exactly what Bianco has created with its amalgamation of Bengali and Italian palates.

“My mother is Bengali and I studied in Milan so I wanted to create a dish that is a reflection of these two rich cultures that are very proud of their heritage and their food,” said Rohan Pariyar, owner of Bianco.

After a lot of trial and error, the chefs at Bianco managed to create the perfect recipe that whisks together the earthy notes of garam masala with velvety mascarpone cheese, resulting in a dish that is delightfully flavourful. The broth in which the rice is cooked remains Bianco’s secret, but we’re all too happy to just dive into this bowl of golda chingri with luscious rice, garnished with fresh basil.
