Mushroom Cappuccino at Zold

The late three-star-Michelin chef Alain Chapel (also known as one of the originators of Nouvelle cuisine) first made the Bouillon de Champignons Comme un Cappuccino or the Mushroom Cappuccino. There’s no coffee in the soup of course, but a rather foamy broth that’s usually achieved with the same steamer attachment that’s used to make a cappuccino, hence the quirky name. Southern Avenue’s Zold – Cafe & Kitchen, known for its intelligent Mediterranean and European line-up has a brand-new soup menu just in time for autumn and this delicious, earthy soup is definitely one of the best things on it.

The traditional mushroom cappuccino uses crayfish and lobster meat since it’s technically a bisque and is thick and creamy in texture. Zold’s version however is vegetarian and made with fresh mushrooms and cream. The new menu also features roasted tomato basil, chicken lemon coriander and fresh sweet corn soups—all terrific seasonal picks!
