Quick and easy cupcake recipe

Lockdown-induced boredom woke up our inner bakers. With too many ‘how-to’ videos, it is difficult to figure out which recipes actually work. Here’s one that guarantees the right cupcakes.

Method:

  1. Mix all purpose flour (190 g), baking powder (1 tsp), baking soda (1/2 tsp) and salt (1/4 tsp) in a bowl. Keep aside.
  2. Whisk together on high speed with unsalted butter (125 g) and sugar (200g), till it becomes smooth and creamy.
  3. Whisk in 2 large eggs, one at a time.
  4. Add vanilla  essence (1.5 tsp)
  5. Keep milk (185ml) ready. Add half of the dry mixture, and half of milk. Fold it using a spatula. Repeat.
  6. Pour into cupcake moulds and bake in a preheated oven at 180° C for 20-25 minutes.

Tip: If the batter is runny, keep adding all purpose flour in small quantities!
