Nothing cures Monday blues like chunky chocolate cookies. But instead of reaching for another store-bought bag, you make your own batch, with just three ingredients. Justine Teresa Dorn who runs the popular YouTube channel Early American, recently shared her recipe for a flour-free, three-ingredient chocolate cookie, taken from the 1800 edition of the famous book The Complete Confectioner. Have a look:

Ingredients:

Grated chocolate - Half-pound
Caster sugar - 1 pound
Egg whites - 2

Method:

  • Pour two egg whites in a bowl and beat to a foam
  • In a separate bowl, mix the chocolate and caster sugar and blend well
  • Pour the egg mixture into the powder mix and blend till you have a consistent paste
  • Make balls or dollops of the mixture and place them on a baking tray
  • Bake for an hour at 230 degrees
  • Serve warm!
