On the menu: Travel through historic Awadh and then to silk paradise –– Murshidabad and Hyderabad –– with every mouthful of the special biryanis on offer. Try the Murshidabadi Biryani (right) with chunks of spring chicken or travel south for the Hyderabadi version with pieces of tender lamb and basmati rice cooked on dum. If you want to experiment, try Mahi Kofta Biryani (left), a special fish biryani with steamed fish balls. Also available are Kachchi Biryani (basmati rice and raw mutton cooked together) and Moti Biryani (mutton biryani with mutton meatballs).
