This year, Anthony Allan, a professor at King’s College, London, was honoured with the Stockholm Water Prize. In 1992, Allan coined the term ‘virtual water’ to describe how much water is used to make things ready for our consumption, such as the shirt I’m wearing today. Recent research reveals that nearly 713 gallons of water are used to create my shirt. An apple only uses approximately 19 gallons. So, every time we use or eat something, ‘virtual water’ use go up by hundreds of gallons. Scary thought, when one considers 37 gallons go into making a cup of tea.
